Join us for a 5-course tasting menu, showcasing game from the Houghton Hall Estate and Deer Park, complemented with seasonal and foraged produce from the region and further afield.

 

Inspired by Houghton’s uncompromising commitment to supporting their native ecosystems and Ant Browns modern take on game cookery, this will be a truly memorable event.

 

To compliment the food, we will be offering an optional wine flight, carefully curated by our friends at Peter Graham Wine.

 

Ant will also be sharing his thoughts on game as the ultimate, sustainable, local ingredient, making this a truly immersive culinary experience.

Arrive at 7pm for a 7.30pm sit down. Please ensure you book your tickets with the guests you wish to be seated with. 

Tickets £55 per guest, includes a glass of fizz.

INTRODUCING
ANT BROWN

"Finding joy in all things food has defined my professional career. Growing, harvesting and sourcing ingredients, cooking, eating and sharing great meals, and immersing myself in the process of learning through the sharing of skills, knowledge and passion have all enriched my life in the kitchen and beyond.  Food for me is a gateway to sharing emotions, building relationships, better understanding people, the environment and the communities that spring from it.

After a brief career in rural property management I followed a circuitous route back to food in my late 20’s. A chunky stint in high end London kitchens was followed by a return to my roots in the North East of England. For the past 13 years I’ve provided bespoke culinary experiences, hospitality services and consultancy expertise to private clients and organisations with a focus on Sporting Estates.

 

I’ve had the privilege of sourcing and cooking the best wild game from some of the most unique and precious landscapes the UK has to offer, preparing and cooking alongside some of the country’s leading chefs, allowing me to really explore the possibilities that game, in all its wonderful variety, has to offer. “ 

HOUGHTON HALL
ESTATE

Houghton Hall is a forward thinking country estate in North Norfolk with a sustainable and responsible approach to game and land management.

 

Just a 30 minute drive from The Feathers, a group of our Head Chefs and kitchen team will be joining Ant Brown for a tour of Houghton Estate the day before our Game Supper. 

Head Game Keeper Robert Hall will take our team on a tour of the deer park, wild game fields and meadows. Robert will share wisdom and insights that he has gained over his 25 year tenure managing the estate. 

This is an immersive experience where our team will learn about game as an ingredient from its roots - including the history of the Houghton herds, their controlled breeding programme, and responsible rearing and culling.

Ant Brown will share his years of experience specialising in cooking gaming and minimising food waste.

The result - an invigorated, inspired and passionate team in The Feathers kitchen creating an amazing game tasting menu.
